- Remove and clean roof fan with chemicals
- Scrape and clean duct with chemicals
- Return roof fan and secure
- Clean grease box, overflow and roof-top work area
- Hood cleaning, plenum, filters and backsplash with chemicals
- Collect and remove grease mixture from bucket
- Remove funnel plastic
- Return filters
- Wash kitchen floor work areas
- Vacuum and mop excess on floor
- Dry and apply polish to stainless steel areas
- Completely clean work areas, equipment, counters and floors
- Attach certification sticker to hood
